The aromas will waft through the market beginning in the early morning as Chef Jason Jiles prepares several different meats from the market for your tasting pleasure in mid-morning. Placing in the top 10 in a recent national barbeque contest, Chef Jiles will teach customers the tricks of the trade in his Chef's Circle cooking demo from 10:30 to 11:30 this Saturday (10/22). Get down to the southwest corner of the park and take a ringside seat!

Chef Jason Jiles' love of food and cooking began in his family café where he was bathed in the pot sink. At 13, he lied about his age in order to gain his first job at the Brandin' Iron Steak House in Big Spring, Texas, and he has worked in the industry since then.

Jason graduated with honors from the Culinary Academy and after spending nine years with the Austin Marriott at the Capitol, Jason decided to return to his roots of home cooking from scratch with the freshest available products. He joined Bon Appetít Management Company (www.bamco.com) where he works as the Chef/Manager at the Cisco Systems, Inc.’s Austin Capitol Café.

Most recently, Jason participated in the Bon Appetit Eat Local Challenge, which featured many growers from the Austin Farmers' Market. Jason was also recently recognized out of 474 contestants as the 8 place Blue Ribbon brisket winner in the 2005 American Royal Barbecue Competition held in Kansas City.
"Food sustains our bodies, communities, environment, and ultimately, our spirits," says Jason. He believes food brings people together and creates a sense of place and a feeling of kinship. He cares about what his guests put into their bodies and its effect on their sense of well being. He works hard to provide food that is fresh, seasonal and minimally processed. "Fruits and vegetables purchased whole and naturally ripe contain the most nutrients and simply taste better," he continues. "Meat and poultry raised without antibiotics or growth hormones are better for your body."

His goal is to provide sustainable and healthful choices on his menu every day.
