September 25, 2004 - Jeff Martinez, El Chile Café y Cantina
Jeff MartinezJeff Martinez of El Chile Café y Cantina comes from good company, as he with three others started the restaurant on Manor Road a year ago. Jeff and Kristine Kittrell are the lead chefs, having been sous chefs at Jeffrey's. They were lead to the new venture featuring Mexican interior dishes by Carlos Rivero, another Jeffrey's alum, who enlisted the aid of his childhood friend Orlando Sanchez.
El Chile opened at the end of October of 2003. While there are vestiges of Tex Mex on the menu, the food gravitates more toward the cuisines of the interior of Mexico. Dinners only, 1809 Manor Rd., 457-9900.
Tamal Azteca
Serves 10-12
1 recipe Ranchero sauce
3 tomatoes, sliced thin
2 squash or zucchini, diced
1 med. eggplant, diced
1 lb. green beans, stemmed and cut
4 cloves garlic, minced
oil for saut&eactueing
1 tsp chili powder
salt to taste
2 cups shredded cheese
15-18 corn tortillas
Sauté veggies until tender but not mushy, about 10 minutes. Add chili powder, season with salt, then set aside to cool. Place a layer of Ranchero sauce on the bottom of a 9"x13" lasagna pan, then place a layer of corn tortillas in the pan. Cover the tortillas with half of the veggies, some tomato slices, 1/3 of the cheese, and more Ranchero sauce.
Cover with another layer of tortillas, then the rest of the veggies, more tomato, cheese, and sauce.Top with another layer of tortillas, sauce, and the rest of the cheese. Bake for 15-20 minutes on 375 degrees then let set for 10 minutes before
serving.

Putting Up With SummerWe've put up with the heat for long enough that most of us will be glad when the summer season has passed. One thing we're all certain to miss, though, are the wonderful flavors of summer, like tomatoes, peppers, and fresh herbs. As part of this week's "Love Your LOCAL Farmer Day", the Austin Farmers' Market will host a demonstration by Andrew W. Smiley, Vegetable Enthusiast and Star Market Volunteer, who will offer some tips on preserving seasonal foods for future use. Handouts featuring hints on food preservation will be available. The chef demo is from 10:30 a.m. to 11:30 a.m. in the southwest corner of the park in the shade of the great oak tree. Seated area, and samples!

September 11, 2004 - Taste the Place
Lost Truffle features "Chocolate" peppers.
Here's where you can match the 'taste' to the 'place'. When you sample the sweet, incredibly fresh and life-filled peppers from area farms, you can then go to that farmer right in the market and ask them about the ways in which they made the peppers so sweet! And, of course, buy some of everything because it is so great! There will also be tastes of cucumbers and pesto on Texas French Bread. Get your TASTES at the TASTE TENT, from 10 a.m. to 12:45 p.m..
Tecolote has some beautiful and tasty "Gypsy" peppers. This young customer wanted an entire taste to himself.
